  • 2 tbsp Butter

Instructions:

  1. First, Using a food processor with a shredding attachment, or a box grater, rice the broccoli to make broccoli rice.
  2. Second, In a double boiler on the stove, or in the microwave, heat the cheddar cheese and heavy cream until the cheese melts and is easy to stir. Stir until smooth. Season with sea salt and black pepper.
  3. Next, Meanwhile, melt the butter in a saute pan over medium heat. Add garlic and saute for about a minute, until fragrant.
  4. Increase heat to medium-high. Add the broccoli rice. Stir fry for about 3 minutes, until tender but not mushy.
  5. When the cheese sauce is ready, add it to the broccoli rice right away before it has a chance to thicken. (If it's too thick and gooey, thin out with more cream first.) Season with more sea salt and black pepper to taste, if desired.
