I’m super excited to share todays recipe with you guys. If you follow me on Instagram you might have seen me make this for dinner a few weeks ago. That was actually the first time I made it and it was such a success! We are huge zucchini boat fans and I had planned to bake them like normal, but I decided to try them in the air fryer and the result was delicious! The zucchini gets tender and slightly crisp and then the cheese on top gets bubbly and slightly browned, it is just perfect! And bonus points that it can be done without turning on the oven and heating the kitchen in this sweltering heat.

I like to make this in the air fryer – it saves money on oil and reduces the greasiness. Feel free to fry them if you like. Keto Buffalo Chicken Zucchini Boats

Ingredients:

  • 1/4 cup ranch
  • 1/2 cup shredded cheddar
  • 1/8 cup buffalo sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 medium zucchini
  • 2 cups chicken, cooked and shredded
  • 3 ounces cream cheese

Instructions:

Air Fryer Instructions:
  1. First, Slice the zucchini length wise and use a small spoon or teaspoon to remove the inside of the zucchini and form a "boat"
  2. Second, Preheat the air fryer to 390 degrees.
  3. Next, Place the hollowed zucchini in the air fryer and cook 3 minutes-5 minutes until it begins to blister. (Cooking time will vary base on the size)
  4. Meanwhile, combine the cooked chicken, cream cheese, ranch dressing, shredded cheddar and buffalo sauce.
  5. Remove the precooked zucchini from the air fryer and fill with the buffalo chicken mixture.
  6. Top with the shredded mozzarella.
  7. Place the zucchini boats back in the air fryer and cook 4 minutes.

Oven Instructions:
  1. First, Preheat oven to 350 degrees
  2. Second, Slice the zucchini length wise and use a small spoon or teaspoon to remove the inside of the zucchini and form a "boat"
  3. Next, Place the hollowed zucchini in a 9x13 baking dish.
  4. In a medium size mixing bowl combine the cooked chicken, cream cheese, ranch dressing, shredded cheddar and buffalo sauce.
  5. Top with the shredded mozzarella.
  6. Bake 20-24 minutes until zucchini is fork tender.
