Filled with plenty of juicy sausage and flavorful veggies, these Keto Sausage, Pepper and Cauliflower Foil Packets are the perfect meal for at home or out in the wild. They can be grilled or baked in the oven.

Every year, when the weather starts turning warmer, I have the best intentions when it comes to using the grill more often. Since I don’t do the actual grilling (I have a ridiculous fear I’m going to blow it up somehow), I really love foil packet dinners because they can just as easily be baked in the oven, if needed.

Prep ahead of time and portion these into individual servings! Loaded with sausage, peppers, rice and cajun seasoning!

The majority of the prep work for this recipe requires a bit of slicing and dicing. You need to slice each sausage link into 8 rounds, the peppers into thin strips, and the shallot into thin slices. Mince the garlic and roll the basil leaves together and cut into ribbons.

Ingredients:

  • 4 sausage links each cut into 8 slices
  • 4 tablespoons butter
  • 1 tablespoon fresh basil cut into ribbons
  • 2 cups cauliflower florets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 sweet peppers red, yellow, or orange, cut into strips
  • 1 shallot minced
  • 2 cloves garlic minced

Instructions:

  1. First, Preheat oven to 400°F (or if grilling set the temperature to 350°F
  2. Second, Lay out 4 pieces of foil, each about 2 feet long.
  3. Next, Divide the strips of peppers onto one side of each of the pieces of foil.
  4. Divide the cauliflower evenly over each and season with salt and pepper.
  5. Top with even amounts of the shallots and garlic.
  6. Top each pile with 8 slices of the sausage and 1 tablespoon of butter.
  7. Fold the foil over the top and roll up all the edges tightly to prevent any juices from leaking out.
  8. Bake in the oven for 30-35 minutes or until the cauliflower is fork-tender. 
  9. If grilling, cook for 15 minutes, then check the cauliflower for fork-tenderness. You may need to continue grilling for another 5-10 minutes.
  10. Once packets are done cooking, carefully open and top with fresh basil.
