Chia puddings are as easy to make, but you usually wouldn’t cook the pudding down like this recipe.  For example, my recipe for a Paleo Chia Pudding simply uses chia seeds and almond milk that sit in the fridge overnight.

My favourite oatmeal flavours have always been maple or apple cinnamon so I decided to recreate my favourite recipe using paleo friendly ingredients.  The best thing about paleo oatmeal is that you can customize it any way you want, use any kind of nuts or seeds and use any kind of nut milk you like.  I’m a big fan of almond milk, but cashew milk would be an even better choice if you don’t keep too much attention to carbs.

I have always loved oatmeal but always had to stay away from it because my body has never really like carbs. I was one of those kids that didn’t eat much or often and I don’t think it is something I have done to myself I just think that is the way my body works. I just don’t need a lot of food. Not needing many calories is a great advantage when there is a famine but when you are a food writer?

I have always read the food descriptions in Farmer Boy with delight. I am enthralled by those long descriptions of the table groaning under it’s weight of breakfast foods. Breakfast is my favorite meal to eat out, my favorite meal to eat in — and the one I am least likely to eat.

Maple Low Carb Oatmeal

Ingredients:

  • 4 tbsp chia seeds
  • 3/8 tsp stevia powder
  • 1/2 tsp cinnamon
  • 40 g sunflower seeds
  • 15 g coconut flakes
  • 1000 ml unsweetened almond milk
  • 1 tsp maple flavouring (optional)
  • 60 g walnuts
  • 60 g pecans

Instructions:

  1. First, Add the walnuts, pecans and sunflower seeds to a food processor and pulse a few times to crumble them up.
  2. Second, In a large pot, add all of the ingredients.  Put on low and simmer for a good 20-30 minutes, stirring, until the chia seeds have absorbed most of the liquid.  Don't forget to stir as the seeds can stick to your pot at the bottom!
  3. Next, When the oatmeal has thickened, turn off the heat and serve hot.  You can also let it cool down and store it in the fridge for your breakfast the next day.  
  4. Serve with fresh fruits and any other desired toppings.
